Fried “Kueh” in Xialun

The kueh (cooked rice cake) of “Xialun fried kueh” has to be prepared starting in the afternoon on the previous day. To make the kueh: soak indica rice for 3 hours and grind it into rice milk, add seasoning and a tad of sugar, mix well, and put it into a steamer to steam for 6 hours, after which cool it down for 3 hours with an electric fan and put it in the fridge. Kueh that is just cooked has more water content, and putting it in the fridge reduces the water.
The next morning, take the plain kueh to the market. Slice the kueh and then pan fry both sides until golden brown. Cube the kueh and sell it to go, along with a small packet of sauce. To make the flavorful sauce: use a blender for ground garlic, and then add the garlic into boiled soy sauce.
