The batter for oyster pancakes at A-Man Stir Fries is made of sweet potato starch. The ingredients are: clams, eggs, and vegetables. The oysters are stone oysters, which are texturally firmer and more expensive; the vegetables include sweet potato leaves, bean sprouts, and cabbage, as well as Artemisia in winter. Vegetables are added in accordance with the needs of the customers. Some people do not like bean sprouts, which then would notand they can ask for it to be added.left out of their omelet. The sweet potato leaves are homegrown, guaranteeing no pesticides.
